This is a very simple concept. You start with tortillas and layer them with vegetables, sauce, beans, or cheese. This is great way to use up some left overs.
I may use beans, salsa, corn, refried beans, tomatoes, or peppers. You can add some cheese in the layers too, if you don’t mind the extra calories. Anyway, you get the idea! Just put a tortilla between layers. I usually aim for at least 4 layers. I usually top with cheese because I love cheese!
Finally, garnish with sour cream (or plain yogurt), avocado, and cilantro!
