Coconut Cinnamon Raisin Rice Pudding

I was invited to a pre-game Thanksgiving potluck today. “Pre-game” meaning try out your new holiday recipe on your friends rather than your perhaps more critical family. I will not be hosting Thanksgiving this year and therefore did not have anything to try out on anyone.  And, with a 4-month old at home, I wasn’t about to make some elaborate dish. However, this particular group of friends is known for their culinary prowess and so I didn’t want to show up with just a bag of chips. 

So here it was, game day, and I hadn’t planned anything. So I was left to come up with a holiday themed dish (gluten free and vegan per pre-game organizer orders) from what I had in my kitchen and in the time it takes for my kiddo to take her morning nap. This morning I got lucky and it was one hour and 15 minutes long. So here is what I came up with. Per usual, I didn’t use a recipe or measure anything. It was a hit!

Coconut Rice Pudding

Ingredients: 
Coconut Milk
Short grain brown rice
Raisins
Cinnamon
Clove Powder
Nutmeg
Coconut Sugar
Coconut Flakes

Instructions:
Cook short grain brown rice with half water, half coconut milk
Mix in raisins and coconut sugar to taste
Add Cinnamon, Clove and Nutmeg to taste
Serve warm with a drizzle of warm coconut milk
Garnish with Coconut Flakes and a little more cinnamon
