New Year Detox

If you are anything like me, you have thrown caution to the wind and eaten just about anything you please for at least the past week.  After a foodie binge I always throw myself into “clean eating” for a spell.  This morning, I woke up and felt the time had come to give back to this poor abused body.  Lots of fruit and vegetables, with a long walk thrown in for good measure.

Ginger Fruit Smoothie

  • one whole grapefruit, peeled
  • one whole apple, cored
  • frozen strawberries, 2 cups
  • fresh ginger, 1 inch

Blend these all together and enjoy!!

 

 

 

 

Broccoli Soup

  • Olive oil, 1 Tbsp
  • green pepper, 1 whole chopped
  • onion, 1 whole chopped
  • bunch broccoli, cut up
  • vegetable broth, 32 oz container

Heat the olive oil, then add the pepper and onion.  Cook until soft.  Add the broccoli and the broth.  Bring to a boil, then lower to simmer.  When the broccoli is soft, whirl it up it a blender!  You may season any way you like.  Today I opted for salt, pepper and a pinch of poultry seasoning for each serving. (no picture of this  because it just looks green…)

After my walk, I came home and put this delicious, warm salad together for dinner.

Warm Brussels Sprouts and Arugula Salad

  • brussels sprouts, sliced
  • coconut oil, to prevent sticking
  • arugula
  • pecans, toasted and chopped
  • avocado, cubed
  • lemon juice and olive oil

Heat the coconut oil in the pan and add the brussels sprouts.  Use a high heat so that the sprouts brown.  While those are cooking, toast the pecans.  Put the arugula in a bowl and drizzle olive oil and fresh lemon juice over it.  Mix thoroughly to coat the arugula with the dressing.  Next, layer the ingredients: arugula, brussels sprouts, avocado and top with pecans!  Simple and delicious!
