So I had to bring a dessert to book club this weekend. I intended to pick up some treats at Whole Foods beforehand. But my husband had to work late and so I knew I wasn’t going to make it there without being really late. So while my daughter was napping, I scoured the kitchen for ingredients to make something sweet, tasty and…. like anyone with an infant knows…QUICK!
I found the following ingredients. If you’ve read any of my other recipes, you’ll know I wing it mostly, so the measurements are estimated.
- 3 cups almond flour
- 1 cup coconut oil (melted)
- 1/8 cup coconut flakes
- 3/4 tablespoon vanilla extract
- 3/4 cup coconut sugar
- 1/2 teaspoon baking soda
- 1/2 cup raw cacao powder
- 1/2 cup gluten free oatmeal ( I made it into flour in the Vitamix)
Combine ingredients in large mixing bowl, roll into balls, place on baking sheets and flatten a bit into whatever cookie shape you want. Bake for 5-15 minutes (depending on how crunchy you like your cookies) at 350 degrees or so.
They were a big hit! Don’t tell anyone they are healthy-ish!
These look delicious!!! Would you use oat flour, or do you prefer turning it into flour yourself?
I prefer it, but either way should work.
