Fall is here in the Northeast. We are hunkering down a bit which means more pasta, casseroles and stews. Today, I present a simple pasta dish. (You should find almost all of the recipes here simple and approachable because what I give you is what I am actually cooking after a long day of work or studying.)
Bowtie Pasta and White Beans
- bowtie pasta – 8 oz
- white beans – 1 can
- onion – chopped
- garlic – minced
- olive oil
- basil
- parmesan cheese
Boil the pasta according to directions. Sauté onions and garlic in olive oil, add white beans to warm when the onions are translucent. Combine with the pasta and add basil (chopped or cut in strips) and parmesan cheese to you liking. Personally, I like a lot of both, but you may not want as much – and that’s ok! This is your meal!
