This idea comes from many sources. But I originally came to appreciate the mixture of grain and vegetables in a bowl when I visited South Korea. Bibimbap was my favorite “go to” meal while I was there. Although they have a unique blend of vegetables and spices, the concept of cooking a grain, adding vegetables and picking a spice combination entered my culinary repertoire. I have done this in many variations and you can make you own adventurous combinations!
Quinoa Grain Bowl
- cooked quinoa
- arugula
- cherry tomatoes
- red pepper
- avocado
- cilantro
- cheddar cheese
This bowl has a Southwestern flair. If you want a sauce, I’d add salsa to this one. Once your ingredients are prepped, just layer in the bowl. I always put the green on the bottom, then the grain, then the other vegetables, finished with the cheese. I hope you use this to put your imagination to work and know that you are eating healthy in a very simple and quick meal!
