As you are all aware by now, I have a vegetable garden. I really love going out in my yard, seeing what is ripe and planning my menu around it. As a kid, I grew up in apartments and never had a garden. I hadn’t really even had many plants on my apartment patios. So, nobody was more surprised than me when I moved into my first house and discovered the joy of digging in the dirt!
I started with a few flowers and things progressed from there. Today, I have lots of flowers and a small (~ 8′ x 12′) vegetable garden. My staple plants are tomatoes, peas, string beans, potatoes, peppers and zucchini. I experiment with varying types of greens. This year, I chose a spicy mesclun mix and rainbow chard. These were good choices as the mesclun mix had some varieties that were slow to bolt (that means grow lanky and flower, which ruins the taste) and the chard is ready later.
Anyway, on to the recipe of the day! It features zucchini (which I am desperately trying to stay on top of!). I read this recipe on the blog “White on Rice Couple” and it sounded easy and delicious. I had all the ingredients on hand, as well as stuff to make actual taco filling. While I didn’t love the idea of turning on the oven (it was hitting 90 here), I decided to go for it anyway and it was totally worth it!
The mixture is does not seem at all like batter. It barely holds together. So when they tell you to use your fingers to press it down, they mean it.
I baked until they were browned but still soft.
I prepared the filling ingredients while the shells baked. I went for a more traditional taco filling but did not heat the chicken. I had the chicken, fully cooked, in the freezer from the last time I roasted a chicken and all I did was thaw it out and sprinkle with a combination of chili powder, cumin, and garlic powder. You can improvise on the vegetables and sauces to make these exactly as you like them.
The final product was wonderful! However, if you don’t have the time, energy or stuff to fill these zucchini shells, they will taste great on their own!
