The Foodie Family is so excited because we have a rare opportunity to be together this weekend to celebrate the wedding of a dear friend. We are fortunate to be staying in a condo with a full kitchen. So – Let the cooking begin!!
Breakfast this morning included a variety of fresh autumn vegetables! And how easy is it to bake instead of stand over the stovetop. This dish gave us more time to visit!
Baked Breakfast Hash
- Butternut squash, 3 cups diced
- Mixture of cooking greens, this rendition was Brussels sprouts, cabbage, and kale, 2 cups
- Red pepper, 1 large chopped
- Mushrooms, 2 cups sliced
- Onion, 1 cup chopped
Preheat the oven to 400 F. Butter the bottom and sides of a baking pan. Toss all ingredients together in the baking dish. Dot the top with butter and bake for about 40 minutes, stirring occasionally while baking.
