These are amazing zucchini enchiladas! I will fully admit. I think we used more cheese than we needed to, but it was delicious! I’m so busy this week (opera gig) that the husband has been wonderful stepping up and making some delicious meals. This is the first.
One thing Mark said was weird about the recipe was the amount of liquid that cooked out of the zucchini. He squeezed a good deal out. Judging how delicious these became, I would recommend doing that.

I think these fell apart because we used some tortillas that were a bit stale. Also, We used smaller tortillas than I think the recipe usually has.
We both LOVED this and it totally satisfied my cravings for Santiago’s. Santiago’s is a really good hole in the wall Mexican place around here.
